In 1992 Barbara “Sky” Burrell left the corporate world to open Sky’s Gourmet Tacos. Her vision was to serve Mexican food with a splash of soul. After 27 years, countless awards, and an appearance on the Food Network’s “The Great Food Truck Race,” Sky’s is still going strong. Fan favorites include carnitas, grilled chicken, and boneless rib tacos, but there are meatless options as well. In fact, Sky’s takes great care with vegan and vegetarian dishes, keeping ingredients separate in the kitchen and using an entirely different grill to prepare them. If you’ve got a sweet tooth, don’t forget their famous cheesecake; it comes in a variety of flavors including mango and pineapple.

Salads are at the heart of what they do with lots of options for vegans and vegetarians such as the Tuscan Kale with button mushrooms and Kumquat vinaigrette.
